Course Details

In this module learners will understand supply chain systems and procedures, and how organisations use these to procure, produce and prepare food and beverages within the hospitality industry, both domestically and globally. This unit demonstrates how supply chain management is essential for efficient operation and for achieving a competitive edge.Students will first cover the influence of the supply chain on food production by covering topics such as (i) explaining how the food and beverage supply chain can improve effectiveness, (ii) describing the principles behind food and beverage production and (iii) discussing the processes involved in food manufacturing.Students will also focus on understanding the operational challenges facing food and beverage suppliers by learning about (i) key considerations of food retailing and food logistics, (ii) challenges in international food and beverage supply chains and (iii) technological trends in food supply chains.Students finally will concentrate on the importance of sustainability and its role in future developments by covering (i) food regulation, safety and quality control, (ii) sustainability issues in the food supply chain and (iii) future challenges in the food and catering sector.
